Holy Mole Taco Truck had their soft opening this weekend. After getting all of their health department stuff taken care of last week (mazel tov on that!) they were parked outside of Seidenfaden’s on both Friday and Saturday night. Despite me being very, very old the allure of fresh, creative, delicious tacos was too much to deny so B and I headed out for tacos at 11:30PM on Saturday night. We’re both very glad we did.

I had a fish taco. Specifically beer-battered tilapia to which I added black beans and queso fresco. Yummy. B had the rajas, their vegetarian offering and had them leave the cheese off for vegan taco goodness. They mentioned that B’s (and I guess mine?) taco was also gluten free. I think that’s cause the tortillas consisted of yummy fresh corn tortillas.

No word yet on regular parking spots for Holy Mole but again, they just had their soft opening so let’s give them a minute. They promise to update Twitter regularly and they recommend that you add them to your Google Latitude friends so you can actually see where they are located when they are out and active. I’ll do my best to post here and on Twitter when I get word on where they will be.
