The Mayan Cafe’s Bruce Ucán will be teaching a class on cooking mole sauces next Tuesday at Campbell’s Gourmet Cottage. Mmmmmm mole.
Chef Bruce will be demonstrating how to make his empanadas stuffed with vegetables from his farmers (we won’t know what veggies he’ll be using until he goes to the farmers market on Saturday). He’ll be making his Yucatec mole sauce to put over the empanadas. He’ll also be explaining how to make his delicious white chocolate mole, paired with duck breast. And for a little palate teaser in the middle, he’ll be showing everyone how to make calamari ceviche – an appetizer everyone is sure to love!
Well, I don’t love calamari ceviche but the vegetable empanadas? Yum. White chocolate mole sauce? Yum again (I wouldn’t serve it with duck of course but trust me I’d find something).
