A new bakery is coming to East Market Street and my friends I tell you that I can’t wait. I wish I could tell you exactly when Cake Flour is opening but they don’t have a firm opening date set yet. The owner did tell me though that it would definitely be by August 1.
She also gave me a flyer describing some of the treats we have to look forward to:

Sounds awesome, how exciting! We Louisville vegans are quite lucky in the baked-goods department (Amazing Grace, Ray’s Monkey House, Highland Coffee), but woefully wanting in the “vegan breakfast” department. I can’t believe no restaurant has tried to cater to what would be a very strong niche (with no competition, apparently). Part of the reason I fell in love with Louisville was the short-lived vegan eatery Benedict’s, where I had a scrumptious vegan breakfast on my first visit to town. *sigh* I look forward to checking Cake Flour out, thanks for the tip!

I thought of you on my recent trip to Seattle because I sampled some amazing vegan pancakes. They were made with bananas and coconut milk and if someone would put them on the menu in Louisville I’d order them every single time. We need to lobby the North End Cafe to step it up in this department.

I’ve politely nagged North End half a dozen times, but I need to start a petition or letter writing campaign or something. An orangutan with below-average intelligence could make vegan french toast, it’s that easy. And if a restaurant already has soymilk (SO hard to come by in this day and age, I realize
, they’ve got all the ingredients they need. Vegan pancakes are slightly trickier, but still child’s play for any cook worth their salt. Tofu scrambles are super-easy too. I’ve been tempted to open my own restaurant, though I lack the $$ and initiative, just so Louisville would have some of the sorely-missed options.

I think you’re right about businesses missing a strong niche here that would be relatively easy to cater to. Put me down on the petition or if you stumble into the money to open up your own vegan cafe count me among your first customers!
I love breakfast and vegan breakfast food is no different, so come on Louisville breakfast spots. Make us some tasty vegan french toast and pancakes and we promise to come buy them.

PJ: Northend does have a tofu stir-fry that is very delicious. They also have oatmeal with fresh fruit and nuts on top. Not as good as vegan french toast, I’ll admit, but it still allows me to eat out for breakfast with my husband, who is not a vegan.

Yeah, I’ve had North End’s tofu stir-fry thing several times, and while it is decent, it’s not really “breakfast food” to me, it’s like a salty savory Chinese stir fry and not really anything like a “tofu scramble” (which is generally lighter and not so soy-saucy). And the oatmeal is good with the addition of the fruit, but I’m still not blown away, I know they can do better than that!

Not at all PJ I’m happy to see this conversation taking place. I adore breakfast food so really any conversation about breakfast food is a-ok in my book.
I haven’t personally eaten the tofu stir fry at North End because I totally agree with you that it’s not a breakfast meal. A tofu scramble would be so easy to do, I’m really surprised they don’t have one on the menu. Particularly a Mexican/Migas style tofu scramble since they have a couple egg based dishes like that on the menu…

So exciting to hear about new vegan baked goods coming to town! I love Ray’s and Amazing Grace (and even Highland Coffee once in a while, but always great to get some more variety.) The Louisville airport also has Alternative Baking Company vegan cookies and new organic dried fruit available, we’ve made it to the big time!

As a former roommate of Claudia’s, I can tell you that you are in for a treat. I was spoiled by the creativity of food that went on in that house. I wish Claud and her team the best of luck and can’t wait to make a trip out there to stand in line with the rest of you.
